Allegresse Vineyards introduces a Late Harvest Cabernet Sauvignon. We have named this little sweetie “Sugar Shack”

Sugar Shack is very special. While checking the vineyard in late November I discovered three areas in the Cabernet Sauvignon where we still had fruit on the vine. Imagine winter in the vineyard, 29 degrees with frost on the ground, the vines had darkened and bear no leaves. As I began to taste the fruit it was truly a miracle. The flavors were so intense yet sweet like candy. I quickly ran to get my refractometer and tested the sugars. I could not believe my eyes. I had to test it twice. The sugars were over the scale. My refractometer only registers to 30 Brix.
I called Heather immediately from the vineyard and together we decided to pick the fruit and give it a try.
The fruit was picked in early December and the sugars came in at 33 Brix. After a 48 hour cold soak the final reading was 36 Brix, WOW! We inoculated and fermentation began.
This dessert wine is perfect for the holiday table. It drinks well on its own or with a special pairing of flourless chocolate cake, fudge, dark chocolates, cheese cake and more.
You must try this wine! We hope to produce Sugar Shack in the future however it is truly up to Mother Nature.
